Roasting temperature for a Venezia Blend varies between 199 and 200 C and for Napoli between
204 and 205.6 C. Average duration of a roasting process is 13-14 minutes.
After the roasting process our coffees pass through an electronically monitored optical sorting system, where the defective beans are sorted out and removed.
Finally, to guarantee optimal freshness, during the packing process Illycafé flushes its beans with inert nitrogen.
